Refrigerator: Let leftovers cool, transfer to a covered dish, and store in the refrigerator for up to one week.
Freezer: Raw potatoes don’t freeze well. Bake the potatoes first, cool completely, then wrap tightly and freeze for up to two months. Reheat covered in the oven until warmed through to preserve texture.

Ingredients
2 lb potatoes, 1/4 cup olive oil, 1 cup grated Parmesan cheese (optional), 1/4 cup herb blend of your choice (fresh or dried).



Directions
Preheat the oven to 350°F (175°C). Wash the potatoes and cut them into 1/2-inch cubes. Toss the potato cubes in a bowl with the olive oil until evenly coated. Lightly oil a baking dish.
Spread half of the potatoes in the dish, then sprinkle with half of the grated Parmesan and half of the herb blend. Layer the remaining potatoes on top and finish with the rest of the cheese and herbs. Cover the dish with aluminum foil and bake for one hour, or until the potatoes are tender and beginning to brown at the edges.
