Crispy Herb-Roasted Potatoes with Garlic and Rosemary

Herb roasted potatoes are an easy, flavorful side dish perfect for autumn and winter meals. They pair well with a wide variety of mains and are simple to customize—swap the herb and spice blend to create a different taste each time.

If you can chop potatoes and use an oven set to 350°F, you can make this dish. The most challenging part is letting the potatoes bake long enough for the edges to crisp and the centers to become tender. The wait is worth it—one forkful and you’ll know why.

How to Store Herb Roasted Potatoes

Refrigerator: Let leftovers cool, transfer to a covered dish, and store in the refrigerator for up to one week.

Freezer: Raw potatoes don’t freeze well. Bake the potatoes first, cool completely, then wrap tightly and freeze for up to two months. Reheat covered in the oven until warmed through to preserve texture.
