Today’s Post
This post is part of our “Five Things We Have Been Loving This Week” series, where we highlight a few things that have caught our attention recently. These posts let us share more than recipes — they give a glimpse into our other interests and everyday life. Skandibaking is a personal project for us, and through these posts we hope you’ll get to know us better. We also aim to inspire you to try new books, films, activities, or places. There’s always something new to discover, and we love sharing the small things that brighten our week.

Thing 1: Football (or soccer)
Football has been our family’s passion for as long as we can remember. Most of us played growing up — Sofie was the exception and took up rowing — but everyone watched matches together. Weekend Premier League fixtures, World Cups, and European Championships were central to family time. Our Danish background played a big role in fostering that love of the game. Living in the UK now, I’m fortunate to attend matches in person; seeing Manchester United play at Old Trafford recently reminded me how electric the stadium atmosphere is. If you’re visiting the UK and can find reasonably priced tickets, going to a match is a very memorable experience.
Thing 2: IKEA
IKEA remains a favorite destination for many reasons: practical, affordable furniture, familiar comfort-food like Swedish meatballs, and the chance to browse a wide range of home goods. Growing up in a largely IKEA-furnished home gave us firsthand experience with the brand’s durability and design. My recent trip to pick up furniture and essentials reinforced why we keep coming back. As a Dane living abroad, I also appreciate finding Scandinavian snacks and treats that remind me of home. A weekend at IKEA is as much about inspiration as it is about shopping.

Thing 3: Muddy Hikes
One thing about the UK: weather can be unpredictable, and a planned sunny hike can quickly turn wet. I recently walked in the Peak District with friends — an area full of rolling hills, moorland, and winding streams. Heavy rain made the trail muddy and slippery; I took a tumble and ended up with a sore knee, but the scenery made it worth it. We enjoyed dramatic views, small caves, and playful lambs in the fields. Even damp and muddy, a good hike clears the head and reminds you how restorative time outdoors can be. If you enjoy nature walks, the Peak District is a lovely place to explore.

Thing 4: Long Weekends Away
Long weekends are perfect for short getaways that feel like a proper break. Over the recent bank holiday, I went to Wales with my boyfriend and friends. We swam in chilly water, ate fish and chips, had a barbecue, and spent evenings playing games and relaxing. Even nearby trips can feel refreshingly different from routine life — fresh air, simple food, and good company go a long way. I came back a little sunburnt and very rested, which is always a sign of a successful mini-break.

Thing 5: House Plants
Spring is the ideal time to welcome new house plants. They brighten rooms, lift moods, and are surprisingly satisfying to care for. Sofie keeps a whole bench of plants that brings life to her home, and many common varieties are easy to propagate if you want more without buying extras. Pothos are a great starter plant — tolerant of low light and forgiving if you forget to water for a week or two. The most common mistake new plant owners make is overwatering, so err on the side of dry. If you have a favorite house plant, we’d love to hear about it in the comments.
