Samoa Cookie Dip with Caramel, Coconut and Chocolate

Girl Scout cookie season is nearly here, and I can’t wait. Truthfully, I probably should be a little worried it arrives so fast—I have absolutely no self-control when a box of Samoas is put in front of me.

Those cookies are pure heaven.

I love simple, crowd-pleasing dips that are both unique and irresistible. With Valentine’s Day approaching, I’m thinking about sweet treats, and this Samoa-inspired dip fits the bill perfectly.

This Samoa Dip is creamy, sweet, and addictive. A smooth caramel-flavored base is layered with toasted coconut and finished with drizzles of chocolate and extra caramel. Spoon it onto shortbread cookies like Lorna Doones, graham crackers or vanilla wafers, and you’ll get all the flavors of a Samoa cookie in a scoopable, shareable form. It comes together quickly and looks as beautiful as it tastes.

Ingredients
  • 8 oz. cream cheese, softened
  • 8 oz. thawed Cool Whip
  • 1/2 cup powdered sugar
  • 1/8 cup caramel sauce (jarred caramel ice cream topping works well)
  • 1/2 cup toasted coconut
  • Chocolate sauce for drizzle
  • Caramel sauce for drizzle
Instructions
  1. In a large bowl, beat together the softened cream cheese, Cool Whip, powdered sugar and caramel sauce until the mixture is smooth and uniform.
  2. Transfer the dip to a serving bowl, leaving a little space between the dip and the rim so toppings can be added without spilling.
  3. Sprinkle the top evenly with toasted coconut.
  4. Drizzle chocolate sauce and additional caramel sauce over the coconut.
  5. Serve immediately with shortbread cookies, graham crackers, vanilla wafers, apple slices or pretzels for contrast.

Tips for success: Use room-temperature cream cheese for the smoothest, lump-free base. If you prefer a less sweet dip, reduce the powdered sugar slightly or use a lighter hand when drizzling caramel and chocolate. Toasting the coconut brings out a nutty flavor and adds a pleasant texture—simply spread the coconut in a thin layer on a baking sheet and bake at 325°F (160°C) for a few minutes, stirring frequently, until light golden.

Serving ideas: This dip is a great dessert option for parties, potlucks or a cozy night in. Offer a variety of dippers—shortbread cookies mimic Samoas best, while salted pretzels or apple slices add a nice sweet-salty balance. For a themed spread, present the dip alongside whole Samoa cookies and small bowls of extra toasted coconut, chocolate and caramel for guests to customize their bites.

Make-ahead and storage: You can prepare the base a few hours in advance and chill it until ready to serve. Add the toasted coconut and drizzles right before serving to keep the coconut crisp and the presentation fresh. Store leftovers covered in the refrigerator for up to 3 days; give the dip a gentle stir before serving and re-toast coconut if you want to refresh the crunch.

Variations: For a slightly richer caramel flavor, fold in a tablespoon of dulce de leche or use a caramel-flavored coffee creamer reduced to a syrup. For a lighter version, substitute whipped cream for part of the Cool Whip or use a reduced-fat cream cheese, keeping in mind texture and flavor will shift slightly.

Enjoy!
