Ingredients

  • 2 cups ice
  • 1/2 cup pineapple juice (use 100% juice)
  • 1 can coconut cream (choose one without preservatives)
  • 3/4 cup rum (optional)
  • 2 cups frozen pineapple chunks
  • 2 Tbs maple syrup

Instructions

  1. Place the can of coconut cream in the freezer for about 3 hours to chill and firm up.
  2. Add the ice, pineapple juice, chilled coconut cream, rum (if using), frozen pineapple, and maple syrup to a blender.
  3. If the coconut cream sticks in the can, run warm water over the outside of the can for a moment to loosen it, then scoop into the blender.
  4. Blend until smooth and at your desired consistency. Add more ice for a thicker, slushier drink.
  5. This recipe yields about 6 cups (48 ounces) of piña colada.

Notes

Omit rum to keep the recipe completely Paleo and make a virgin piña colada.
