This is the penultimate post of Sinful Nutrition’s Hummus Week. I’ve taken hummus into some unexpected places — a reminder never to underestimate the power of a chickpea.
If you binge-watch Diners, Drive-Ins, and Dives like I do, you’ve likely heard of a Juicy Lucy — a burger with the filling cooked inside the patty. I’m not a fan of molten cheese, so I went a different route: smoky, caramelized onion hummus tucked inside a bean burger.

I adapted my simple bean burger recipe into a stuffed version. Caramelized onion hummus is the obvious choice here — it lends sweetness and savory depth without excess oil or dairy.
Cooking Tips:
- Pinch and seal the edges of each patty well after adding the hummus to keep the filling from leaking during cooking.
- These burgers are very versatile: try different hummus flavors and spices. Basil and sundried tomato hummus, or jalapeño hummus with cumin and chili powder, are great variations.
- Use starchier beans if you prefer a firmer patty. Kidney or cannellini beans tend to hold together better than softer varieties.
- If the mixture seems too dry to form, add water a tablespoon at a time until it binds.

Ingredients
- 1 (28 oz) can black beans, drained and rinsed
- 2 tablespoons flour (use gluten-free if needed)
- 2 tablespoons chopped cilantro
- 2 teaspoons garlic powder
- 3 ounces (6 tablespoons) Sabra caramelized onion hummus
Instructions
- Heat a large skillet over medium heat.
- In a large bowl, combine the drained beans, flour, cilantro, and garlic powder.
- Mash the beans until the mixture holds together.
- Form the mixture into eight even balls, then flatten each into a disc.
- Place about two tablespoons of hummus in the center of four patties.
- Top with the remaining four patties and press around the edges to seal.
- Spray the skillet with nonstick spray and cook the burgers 2–3 minutes per side, until golden brown.
- Serve on buns or a bed of greens with your favorite toppings.
