Happy Hummus Saturday, legume-loving friends!

This is the penultimate post of Sinful Nutrition’s Hummus Week. I’ve taken hummus into some unexpected places — a reminder never to underestimate the power of a chickpea.

If you binge-watch Diners, Drive-Ins, and Dives like I do, you’ve likely heard of a Juicy Lucy — a burger with the filling cooked inside the patty. I’m not a fan of molten cheese, so I went a different route: smoky, caramelized onion hummus tucked inside a bean burger.

Hummus Stuffed Burger

I adapted my simple bean burger recipe into a stuffed version. Caramelized onion hummus is the obvious choice here — it lends sweetness and savory depth without excess oil or dairy.

Cooking Tips:

  • Pinch and seal the edges of each patty well after adding the hummus to keep the filling from leaking during cooking.
  • These burgers are very versatile: try different hummus flavors and spices. Basil and sundried tomato hummus, or jalapeño hummus with cumin and chili powder, are great variations.
  • Use starchier beans if you prefer a firmer patty. Kidney or cannellini beans tend to hold together better than softer varieties.
  • If the mixture seems too dry to form, add water a tablespoon at a time until it binds.
