  • 14 ounces extra firm tofu
  • 1 tablespoon coconut oil
  • 2 tablespoons gluten free soy sauce (or tamari or coconut aminos)
  • 1 teaspoon sesame oil
  • 2 teaspoons chili garlic paste
  • Soup
  • 1 tablespoon coconut oil
  • 1 tablespoon butter (sub vegan butter for vegans/dairy free eaters)*
  • 1/2 yellow onion, sliced
  • 8 ounces mushrooms, sliced
  • Optional :1 serrano pepper, minced (remove seeds/membrane for less heat)
  • 5 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 to 4 teaspoons curry powder
  • 1/2 teaspoon black pepper**
  • 1/4 to 1/2 teaspoon turmeric powder
  • 4 cups low sodium veggie broth or chicken broth
  • 1 cup filtered water
  • Optional: 1 tablespoon fish sauce (omit for vegans)
  • 1 red bell pepper, sliced into 1 inch strips
  • 4 ounces gluten free brown rice noodles
  • 1 15 ounce can low fat coconut milk (sub full fat for a richer taste)
  • salt to taste
  • Juice of 1 lime
  • 4 green onions, sliced
  • Optional Toppings:
  • Lime wedges for squeezing

Instructions

  1. Drain the tofu: Remove extra-firm tofu from its package and drain. Press or place between plates lined with paper towels for at least 10 minutes to remove excess moisture.
  2. Cook the tofu: Heat a large nonstick skillet over medium. Cut tofu into 1-inch pieces and melt coconut oil in the pan. Fry tofu 5–8 minutes per side until golden and crispy. Whisk together soy sauce, sesame oil, and chili garlic paste; add to the pan briefly so the sauce adheres to the tofu. Keep warm in a low oven if needed.
  3. Sauté aromatics and spices: In a large pot or Dutch oven over medium-low heat, melt coconut oil and butter (or vegan butter). Add mushrooms, sliced onion, and optional Serrano pepper; sauté until tender. Stir in garlic, grated ginger, curry powder, black pepper, and turmeric and cook about 1 minute until fragrant.
  4. Simmer: Add the vegetable or chicken broth, filtered water, optional fish sauce, and sliced red bell pepper. Increase heat, cover, and bring to a simmer for about 3 minutes.
  5. Cook the noodles: Stir in brown rice noodles and simmer another 3 minutes, or until noodles are tender but still have a slight bite. Remove from heat — the noodles will continue to soften in the hot broth.
  6. Finish: Stir in coconut milk, salt to taste, lime juice, and sliced green onions. Adjust seasoning as needed.
  7. Serve: Ladle into bowls and top with crispy tofu, extra green onions, cilantro, and lime wedges. Add a drizzle of sesame oil if desired.
  8. Store leftovers: Refrigerate soup for up to 3 days. Keep leftover tofu separate; noodles will continue to absorb broth over time and can become soft after several days.

Notes

*Butter adds extra richness and flavor to the sautéed mushrooms; replace with more coconut oil for a vegan version.

**Black pepper can enhance turmeric’s benefits and also adds warmth. If your curry powder already includes pepper, you can skip this.

The tofu is best fresh for maximum crispiness, and you may wish to make extra if you plan to serve leftovers. Shrimp or cubed chicken are easy alternatives and work well with the same sauce.
