I love recipes like this — so simple they barely feel like cooking. This creamy Crock-Pot salsa verde chicken is exactly that: dump, walk away, shred, and serve. It’s effortless and consistently delicious.
Using homemade salsa verde takes it up a notch and is highly recommended, though store-bought will work too. The sauce keeps the chicken moist while adding plenty of flavor and creaminess.
One of the best things about this recipe is how versatile the finished chicken is. Here are some ideas:
- Served over white or brown rice
- Stuffed into tacos with lettuce and green onions
- Rolled in burritos
- Built into a burrito bowl with your favorite toppings
- Eaten straight from the fridge with a fork
There are countless other ways to enjoy it — this chicken is a meal prep hero.
Crock-Pots are perfect for soups, stews and dishes that benefit from long, slow cooking, but I’ve sometimes found plain meat can dry out when left to cook for hours. The creamy salsa verde in this recipe prevents that — the chicken comes out tender, juicy and full of flavor.
It’s easy, budget-friendly, and reliably tasty — perfect for busy weeknights or make-ahead meals.
