Ingredients

  • 1 tablespoon + 1 teaspoon vegetable oil, divided use
  • 2 1/2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 teaspoons minced garlic
  • 1/4 cup low-sodium chicken broth or water
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons corn starch
  • Salt and pepper to taste

Instructions

  1. Heat 1 teaspoon of oil in a large pan over medium heat.
  2. Add the green beans and cook about 3–4 minutes, until tender-crisp.
  3. Remove the green beans from the pan, place them on a plate, and cover to keep warm.
  4. Wipe the pan clean with a paper towel and increase heat to high.
  5. Add the remaining tablespoon of oil.
  6. Season the chicken pieces with salt and pepper and add them to the pan in a single layer. You may need to cook the chicken in batches. Cook 3–4 minutes per side until golden and cooked through.
  7. Add the garlic to the pan and cook 30 seconds until fragrant.
  8. Return the green beans to the pan and cook 2 more minutes to warm them through.
  9. In a bowl, whisk together the chicken broth (or water), honey, and soy sauce.
  10. In a small bowl, mix the cornstarch with 1 tablespoon cold water to form a slurry.
  11. Pour the soy-honey mixture over the chicken and green beans and stir briefly, cooking about 30 seconds.
  12. Whisk in the cornstarch slurry and bring to a gentle boil. Cook 1 more minute, stirring constantly, until the sauce begins to thicken and coat the ingredients.
  13. Serve immediately with rice, noodles, or your preferred side.
