Butternut Squash Pasta Sauce

Butternut squash makes an excellent base for a creamy, savory pasta sauce. Its natural sweetness and smooth texture blend wonderfully with tomato paste and a touch of cream to deliver a balanced, silky sauce. The following steps produce a reliable puree-based sauce you can tailor to taste:

  • Steam or boil one 10-ounce bag of frozen butternut squash until tender, or use about 2 cups of fresh, peeled and cubed squash, steamed or boiled until soft.
  • Transfer the cooked squash to a blender and puree until completely smooth. If the blender struggles, add 1–2 tablespoons of liquid (water, stock, or reserved pasta water) to help it along.
  • Heat the puree in a skillet over medium-low heat. Stir in about 1 cup reserved pasta water, 2 tablespoons tomato paste, and 2 tablespoons (about 1/4 cup) heavy cream. Adjust the amount of pasta water or cream to reach your preferred consistency and flavor.

What does butternut squash sauce taste like?

Butternut squash has a mild, slightly sweet flavor that adapts well to savory ingredients. In this pasta sauce, the squash provides a gentle sweetness and creamy texture while tomato paste and a small amount of cream add savory depth and richness. The final taste is smooth and mild, making it an excellent match for salty Parmesan, peppery kale, and the robust flavor of browned Italian sausage.

Why add pasta water to the sauce?

Reserved pasta water is a simple, powerful trick for finishing sauces. The starchy water helps the sauce cling to the pasta, improves mouthfeel, and can thin or thicken the sauce as needed without diluting flavor. For this recipe, start with about one cup of reserved pasta water and add more sparingly until the sauce reaches the consistency you want.

Tips for the Best Lightened-Up Pasta Sauce

  • Blend until smooth: A completely smooth butternut puree yields a velvety sauce. If needed, add a tablespoon or two of liquid to help your blender achieve a silky texture.
  • Reserve extra pasta water: Keep more than a cup of pasta water on hand. It’s easier to thin the sauce gradually than to try to concentrate it later.
  • Use cream sparingly: A small amount of heavy cream enriches the sauce without making it heavy. You can substitute half-and-half for a lighter option, adjusting quantities to taste.
  • Season gradually: Taste as you go and add salt and pepper at the end, since Parmesan and sausage will add saltiness.
  • Customize heat: Choose mild or spicy Italian sausage to control the spice level, or add a pinch of red pepper flakes if you want extra warmth.

This Sausage and Butternut Squash Pasta features a creamy, lightened up pasta sauce, fresh kale and browned Italian sausage. This is the perfect family friendly dinner recipe that is ready in about 30 minutes!

Ingredients

Creamy Butternut Squash Sauce

  • 10 ounce package frozen butternut squash, steamed until soft OR 2 cups cubed fresh butternut squash, steamed or boiled until soft.
  • 1 cup reserved pasta water
  • 2 tablespoons tomato paste
  • 1/4 cup heavy cream

For the Pasta

  • 2 cups dry penne pasta, cooked al dente (1 cup pasta water reserved)
  • 1 pound Italian sausage, browned
  • 2 cups fresh kale, chopped
  • 1/2 cup Parmesan, grated
  • Salt and pepper to taste

Instructions

  • Bring a large pot of salted water to a boil. Cook the penne according to package instructions until al dente. Before draining, reserve about 1 cup of the starchy pasta water, then drain the pasta and set it aside.
  • While the pasta cooks, brown the Italian sausage in a skillet over medium heat, breaking it into pieces as it cooks. Drain any excess fat and set the sausage aside on a paper towel–lined plate.
  • Steam or boil the frozen or fresh butternut squash until very tender. Transfer the cooked squash to a blender and puree until completely smooth. If the puree is too thick for your blender, add 1–2 tablespoons of reserved pasta water to help it blend.
  • Return a deep skillet to medium-low heat and combine the butternut squash puree, about 1 cup reserved pasta water, tomato paste, and heavy cream. Stir and warm the sauce gently until smooth and heated through. Adjust the consistency with additional pasta water or cream if needed, and season with salt and pepper to taste.
  • Add the cooked penne, browned sausage, chopped kale, and grated Parmesan to the skillet. Toss until the pasta and kale are coated and heated through and the cheese has melted into the sauce. Taste and adjust seasoning, then serve immediately while warm.

Notes

See the tips above for blending and adjusting the sauce. If you prefer a vegetarian version, substitute the sausage with roasted mushrooms or seasoned plant-based crumbles. Leftovers keep well in the refrigerator for 2–3 days; reheat gently with a splash of water or milk to loosen the sauce.
