Over the years I’ve made honey chipotle chicken in many forms, but pairing it with a fresh avocado salsa in tacos is one of my favorites. The combination of sweet, smoky and mildly spicy notes is simple yet satisfying.

The flavor profile — sweet, smoky and a touch of heat — keeps things interesting without being overwhelming. I grill the chicken for extra char and depth; when you know your grill it’s easy to keep the chicken juicy and flavorful. Grilling also keeps the kitchen cleaner and adds a delicious caramelized note where the hot honey hits the meat.

How it comes together

Spoiler: it’s fast. Season the chicken with chipotle chili powder, salt, pepper and garlic powder, then drizzle with olive oil and hot honey. Grill the chicken 10–12 minutes total, then let it rest for 10 minutes before chopping. During the rest time, make the avocado salsa: cubed avocado, diced red onion, jalapeño, cilantro and lots of lime juice. Toss with salt and pepper and you’re done.

Finish the tacos with crumbled cotija or feta, warm tortillas (corn or flour both work), and an extra drizzle of hot honey if you like. The result is warm, spicy-sweet chicken paired with creamy, cooling avocado — a perfect taco.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • Kosher salt and pepper
  • 1 teaspoon chipotle chili powder
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon hot honey, plus more for drizzling
  • 2 avocados, cubed
  • 1 jalapeño, seeded and diced
  • ⅓ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • 1 to 2 tablespoons fresh lime juice
  • 8 to 12 small corn or flour tortillas
  • Cotija or feta cheese for topping

Instructions

  • Preheat your grill to high and let it heat for 10 minutes.
  • Place the chicken on a plate and season all over with chipotle chili powder, salt, pepper and garlic powder. Drizzle with olive oil and hot honey, turning to coat.
  • Grill the chicken with the lid closed for 5–6 minutes per side, or until internal temperature reaches 165°F. Remove and let rest 10 minutes, then chop. Drizzle with extra hot honey if desired.
  • In a bowl, combine avocado, jalapeño, red onion, cilantro and lime juice. Season with salt and pepper and toss gently.
  • Warm the tortillas. Fill with chopped chicken, top with avocado salsa and a sprinkle of cotija or feta. Serve immediately.
