It’s been a hectic stretch lately. Between taking on more projects and trying to keep the household running, I’ve found myself with less time to prepare meals. I still cook constantly, but not always for everyday meals—sometimes I’m making desserts or snacks and also need a reliable dinner option.
As much as I’d love to eat cupcakes for every meal, that’s just not sustainable. So when quick, satisfying dinners are a must, I turn to loaded burrito bowls.

Ingredients
- 1 pound ground beef
- 14.5 ounces black beans
- 1 cup corn
- 3 tablespoons taco seasoning mix
- ½ cup water
Toppings
- cooked rice
- chopped lettuce
- diced tomatoes
- shredded cheese
- sour cream
- diced onion
- diced cilantro
- pickled jalapeno
- hot sauce
- lime wedges
Instructions

Brown the ground beef in a pan. Drain any excess fat. Add the black beans, corn, taco seasoning and water. Stir, then simmer for about 15 minutes. Remove from heat.
