We all have moments when we crave something intensely but can’t indulge freely. Lately I’ve been craving ice cream — lots of it. While store-bought tubs are convenient, they often contain excessive fats and refined sugars. An occasional treat is fine, but it shouldn’t become a habit.
A better option is to visit an artisanal gelateria that uses high-quality ingredients. But if you don’t feel like going out, there’s a third, even healthier option.

Nicecream — banana ice cream
Yes — the third option is nicecream!
Nicecream is an icy, creamy dessert made from frozen bananas and flavored with whatever you like: fresh fruit, nuts, coffee, chocolate, mint, vanilla, matcha — the list goes on. Use your imagination and you’ll have a refreshing treat in minutes.
One reason I love this snack is its convenience: you can make and enjoy it immediately. You can also store it in the freezer; just remember it will harden. Pull it out a few minutes before serving for the perfect texture.

This coffee version is the best I’ve tasted
I adore coffee. Recently I’ve reduced my intake and usually drink decaf, but cold coffee still appeals to me — which is why this vegan coffee nicecream is ideal, especially as a light dessert after a meal.
How this recipe was born
I created it last summer and the first time I tasted it I was honestly blown away. I re-shot photos recently and fell in love with the flavor all over again. Some things are hard to describe — just try it and tell me what you think.

NICECREAM AL CAFFÈ
Ingredients
- 2 Frozen bananas
- 2 teaspoons Instant coffee powder – or 4 tablespoons of liquid espresso
- 2 Medjool dates – (optional but highly recommended)
- a drop Alcohol-based vanilla extract
- 20 g Dark chocolate

Single step: blend the frozen banana slices (keep a batch in the freezer for quick nicecream), together with the dates, coffee and vanilla. Stop when the texture is smooth and creamy. Serve topped with dark chocolate chunks.

The essential ingredients are, of course, bananas and coffee. Instant coffee is preferred because it won’t affect the texture as much as liquid espresso does. (Note: after testing, using liquid espresso also works well.)

You can omit the dates or substitute honey or agave syrup, though dates add natural sweetness and depth. Vanilla adds a lovely note but isn’t mandatory.

Enjoy the nicecream immediately or freeze it and take it out a few minutes before serving for a scoopable consistency.

P.S. A powerful blender makes the best nicecream. The stronger the motor, the faster it processes frozen banana and the less the mixture will warm up. If it softens too much, place it in a sealed container in the freezer for about ten minutes before serving.
