Notes on ingredients
- Dry roasted hazelnuts: Roasting intensifies the nutty flavor and gives them a pleasant crunch. See How to roast hazelnuts for simple roasting directions.
- Coconut flour: This is finely ground, dried coconut flesh. It is different from shredded or desiccated coconut and soaks up moisture quickly.
- Dates: Any soft, moist variety works. If your dates are dry, soak them in water at room temperature for 1–2 hours until soft.

How to make it
How to soak dates: Place pitted dates in a bowl and cover with water. Let them soak at room temperature for 1–2 hours, or until they become soft.
Step 1
Drain the soaked dates well. Add them to a food processor with the dry roasted hazelnuts and fine coconut flour.
Step 2
Process the ingredients until the mixture comes together and holds when pressed.
Step 3
Roll the mixture into small balls. This recipe yields about 20–22 energy balls depending on size.
Step 4
Enjoy right away or store the balls in the refrigerator for up to a week.

Tips and how-tos
Roasting hazelnuts brings out their aroma and creates a crisp texture. Follow these steps:
- Preheat the oven to 180 °C (350 °F).
- Spread the hazelnuts in a single layer on a baking sheet.
- Roast for 10–15 minutes, stirring or shaking the tray every 5 minutes so they brown evenly.
- When the nuts are fragrant and lightly browned, remove them from the oven and transfer immediately to a plate to cool.
