  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 egg white
  • 2 tbsp unsweetened dried cranberries
  • ½ tablespoon orange zest
  • 2 tbsp finely chopped walnuts (optional)
  • ⅓ cup chocolate chips — sugar-free chips (low carb) or Enjoy Life/other dairy-free chips for paleo

Directions

  1. Preheat oven to 350°F. Grease or oil an 8×8-inch baking pan (use a 9-inch loaf pan for thicker bars).
  2. In a large bowl, combine almond flour, coconut flour, shredded coconut, orange zest, sweetener, baking powder, and gelatin. Stir until evenly mixed.
