- 1 large egg
- 1 egg white
- 2 tbsp unsweetened dried cranberries
- ½ tablespoon orange zest
- 2 tbsp finely chopped walnuts (optional)
- ⅓ cup chocolate chips — sugar-free chips (low carb) or Enjoy Life/other dairy-free chips for paleo
Directions
- Preheat oven to 350°F. Grease or oil an 8×8-inch baking pan (use a 9-inch loaf pan for thicker bars).
- In a large bowl, combine almond flour, coconut flour, shredded coconut, orange zest, sweetener, baking powder, and gelatin. Stir until evenly mixed.
- Add the whole egg, egg white, vanilla extract, and melted butter (or coconut oil). Mix until thoroughly combined into a thick dough.
- Fold in chocolate chips, dried cranberries, and walnuts if using.
- Press the dough evenly into the prepared pan and bake 20–30 minutes, or until the center is set and a toothpick inserted in the middle comes out clean. Cool completely before cutting into bars to ensure clean slices.
