All summer long I kept a few flavored syrups on hand for iced coffees, mocktails, and sodas. Cherry vanilla syrup is especially good stirred into an ice-cold cola, but it’s equally at home in hot drinks or desserts.

How to make Cherry Vanilla Syrup

Ingredients for Cherry Vanilla Syrup

Simple syrup is fundamentally just sugar and water in equal parts. From that base you can add fruit, spices, or extracts to build flavor. For this recipe, frozen cherries work well and are more readily available year-round than fresh cherries. They release plenty of flavor when simmered with the syrup.

To prepare the syrup, combine the water, sugar, and cherries in one saucepan, simmer for about 20 minutes to extract flavor and dissolve the sugar, then strain and add vanilla. It’s quick, hands-off, and results in a richly flavored syrup you can use in many ways.

Ingredients

  • 1 cup Water
  • 1 cup Sugar
  • 12 oz Frozen Cherries
  • 1 tablespoon Vanilla Extract

Instructions

  • Add the water, sugar, and cherries to a saucepan.
  • Bring to a gentle simmer over medium heat and cook for about 20 minutes, stirring occasionally, until the sugar is dissolved and the cherries have released their juices.
  • Remove from heat and strain the mixture through a fine mesh sieve, pressing to extract as much liquid as possible.
  • Stir in the vanilla extract while the syrup is still warm.
  • Transfer the syrup to an airtight container and refrigerate. Store for up to two weeks.

Notes

  • If fresh cherries are available, you can use them instead of frozen. Frozen cherries work well for extracting flavor and are convenient year-round.
  • This syrup is delicious in teas, coffees, sodas, ice cream, pancakes, and more—feel free to experiment.
  • Use a high-quality vanilla extract for better depth of flavor, and increase the amount if you prefer a stronger vanilla note.
