Ingredients

  • 12 oz cooked salmon
  • 3 tablespoon sriracha hot sauce
  • juice of one lime
  • 2 tablespoon fresh cilantro or parsley chopped
  • 1 cup Monterey cheese grated
  • 8 flour tortillas 6″

Instructions

  1. In a bowl, combine the flaked salmon with lime juice, Sriracha, and chopped cilantro or parsley. Taste and adjust the heat or lime to your preference.
  2. Preheat a grill pan or skillet to medium-high and lightly oil it.
  3. Place four tortillas on the hot surface. Sprinkle half of the grated cheese evenly over each.
  4. Divide the salmon mixture evenly on top of the cheese.
  5. Add the remaining cheese over the salmon, then top with the remaining tortillas.
  6. Grill until the bottom tortilla is crisp and the cheese has melted, about 2–4 minutes.
  7. Carefully flip each quesadilla and grill the other side until crisp and heated through.
  8. Remove from heat, cut into halves or wedges, and serve hot with your favorite salsa or a simple salad.
