Lemonhead Rice Krispie Treats Recipe — Zesty Citrus Marshmallow Bars

My house is unusually quiet right now — a rare stretch of calm while my three youngest are away at camp until Wednesday. With everyone gone, I’ve enjoyed a couple of days at home: the house is clean, I haven’t needed to do laundry since Monday, and it’s been blissfully peaceful.

Two of my boys are out on the river and the other is working on merit badges in the heat, so I’ve been staying inside where it’s cool.

I wanted to bake, but it reached 104°F on Monday and the last thing I wanted to do was turn on the oven. I considered making my Lemonhead Cookies, but the heat made me rethink that plan. Instead I opted for Rice Krispie treats — no oven required — and decided to give them a lemony twist.

Because I couldn’t stop thinking about Lemonhead Cookies, I crushed up Lemonheads and stirred them into the Rice Krispie mixture. The result — Lemonhead Rice Krispie Treats — was surprisingly brilliant. If you love lemon and enjoy classic Rice Krispie treats, these will be right up your alley.

Gooey (the only acceptable texture for Rice Krispie treats) and bright with lemon flavor, these bars are simple to make and guaranteed to brighten the day.

Lemonhead Rice Krispie Treats

Description

Delicious Rice Krispie treats made extra bright with crushed Lemonheads.


Ingredients


Scale
  • 5 Tbsp butter
  • 1 pkg. (10 oz) miniature marshmallows
  • 1/2 cup Lemonheads (measure, then crush)
  • 5 cups Rice Krispies

Instructions

  1. Butter an 11×7 or 9×9 glass dish, depending on desired thickness (I used an 11×7).
  2. Measure 1/2 cup Lemonheads, then crush them in a food processor or blender. Alternatively, place Lemonheads in a heavy-duty zip-top bag and crush with a rolling pin.
  3. In a large saucepan over low heat, melt the butter with the marshmallows. Stir until the marshmallows are almost completely melted. Remove from heat, then stir in the crushed Lemonheads. Add the cereal and mix thoroughly.
  4. Press the mixture into the prepared pan and allow to cool before cutting into bars.

Notes

You don’t need to crush the Lemonheads into a fine powder — leaving some small pieces gives a pleasant lemony crunch.
